Preheat the oven to 165 degrees Celsius. Grease and add parchment paper to a 2 nine-inch cake pan.

2. Now mix all-purpose flour, cornstarch, salt and baking powder together in a bowl.

3. Beat the yolk of the egg until a thick paste is formed, add granulated sugar, cold water and vanilla essence to it and beat it until a thick foam is prepared.

4. Gradually add flour mix (point 2) to the yolk mixture and mix everything to make a smooth batter.

5. Now beat the egg white with butter to a fine paste and, using a flexible spatula, add this foaming paste to the mixture.

6. Now, separate the mixture into 2 nine-inch cake pans and bake them at 165 degree Celsius for about 25 minutes. Once baked, let it cool off for 10 minutes and then invert.

It’s Filling Time

1. Take a large bowl and add ricotta milk, vanilla extract, powdered sugar, and cinnamon powder to it. Whisk them either with a hand or electric mixture.

2. Ricotta milk has many lumps, so it might take a little time to come out with a smooth consistency.

3. Now the homogenous mixture is well incorporated, add the lemon zest and choco chips to it.

4. Make this mixture in between when your cake is baked so that as you wrap it in plastic, you can refrigerate it for a longer time till your cake cools down.

Let’s Assemble the Cassata Cake

1. Cut the layers of the cakes, and now you are ready with 4 layers of the cake where you would add the filling we will make.

2. Add rum or marsala with water and apply them to each layer of the cake with a brush.

3. Try to divide the filling into 3 parts.

4. Take a springform cake pan, put a layer of cake at the bottom.

5. Apply 1/3rd of the filling above the first layer. Gradually, add the 2nd layer to it and repeat the same.

6. Add the 3rd layer and apply the 3rd part of the filling. Now apply the 4th layer with the brown part up.

7. Now wrap the cake and put it in the refrigerator for at least 4 hours.

Frosting and Decoration – A final add-on

1. Add whipped cream, rum and sugar and beat until formed a firm frosting. If you are not using it at the same time, then refrigerate it till you use it.

2. Now take the cake out and place it on a serving plate.

3. Add frosting at the top and at the sides, make it look easy and flawless.

4. Add strawberries, choco shavings and cherries on the top.

5.
