How to Make a Mint Chocolate Layer Cake?

Ingredients For Mint Chocolate Layer Cake

Prepare the Cake

  • Approx 250-270 gms of plain flour. Use can also use all-purpose flour.
  • Eighty to ninety gm of cocoa powder
  • One teaspoon of baking powder
  • One and a half teaspoons of baking soda
  • Approx 250 ml of buttermilk
  • Three-fourth cup of vegetable oil
  • Half a cup of brown sugar or any sugar of your choice.
  • One and a half cups of caster sugar
  • Two teaspoons of vanilla extract
  • Two or three eggs at room temperature

  • Prepare the Mint Buttercream Frosting

  • 150 to 170 gm of semi-sweet or dark chocolate pieces
  • 170 to 180 ml of thick heavy cream
  • One teaspoon of pure vanilla extract. You can also use two teaspoons of vanilla essence.
  • One teaspoon of instant coffee powder (optional for a tint of coffee flavour)
  • Mint-flavoured chocolate cookies (optional for decoration)
  • Chocolate sprinkles or choco-chips for garnishing purposes

  • Instructions for Mint Chocolate Layer Cake

    For Chocolate Layer Cake

  • Preheat your oven to 350 degrees F (180 degrees Celsius). Now, grease two 8-by-2-inch round cake pans with butter. Line each pan with parchment paper, then more butter and dust some flour on the pans.
  • In one large bowl, combine all the dry ingredients. Sift together the flour, baking powder, cocoa powder, and baking soda; add sugar, and whisk everything together.
  • In a separate mixing bowl, combine the buttermilk, vanilla extract or essence, vegetable oil, and eggs. Whisk everything together.
  • Combine the wet mixture with the dry mix while slowly stirring together using an electric mixer for a better experience.
  • Pour the entire cake batter into the prepared baking pans and bake for approximately 30 to 35 minutes, or until a cake tester, skewer, or knife comes out clean. Cool the cake down for 30 minutes in the pans before turning it onto cooling racks to cool completely.
  • When the cakes have cooled completely, level each one and cut each layer in half to make four cake rounds. Keep them in the fridge until ready to assemble.

  • For Mint Buttercream

  • Take a large bowl and beat butter with icing sugar with an eclectic mixer. Do not add the sugar in one go; add gradually, one cup at a time. Pour a tablespoon or two of milk to help loosen the mix. Add in the peppermint extract and continue beating. The icing should not be too thick or heavy.
  • Incorporate the grated chocolate flecks, and keep the mixture aside.

  • For Chocolate Ganache

  • Place the chocolate in a heatproof glass bowl over a saucepan of simmering water. Set aside until cooled to room temperature after stirring until just melted.
  • Add the cream to a small pan and heat it over medium flame until it simmers but does not boil. Pour the warm cream over the chocolate right away, cover the bowl, and set aside for 3-5 minutes. Add the coffee powder, vanilla extract, and two teaspoons of the hottest tap water to the mixture.

  • Ensemble the Mint Chocolate Layer Cake

  • Place one layer of the cake on a stand and spread one-third of the mint buttercream. Cover a second layer and another third of the mint buttercream. Repeat with the remaining mint buttercream and a third layer of cake. Finish with the last layer of cake.
  • Apply the chocolate buttercream to the top and sides of the assembled cake. Smooth the cake's surfaces as much as possible. Fill a piping bag with the remaining chocolate buttercream and pipe some dollops of the prepared frosting around the top of the cake. Garnish with mint cookies, chocolate chips, or chocolate sprinkles if desired.
