The Classic Italian Cream Cheese Cake Recipe

Cream Cheese Cake


For the Cake

• 5 large eggs (separated)

• 2 cups all-purpose flour

• 1 cup buttermilk

• 1 tsp baking soda

• 1/2 cup shortening

• 2 cups granulated sugar

• 1 cup sweetened and flaked coconut

• 1 stick (1/2 cup) unsalted butter (softened)

• 1 1/2 tsps vanilla extract

• 1 cup pecans (chopped, divided)

For the Frosting

• 1 (8-ounce) package cream cheese (softened)

• 1 tsp vanilla extract

• 1 stick (1/2 cup) unsalted butter (softened)

• 1 to 2 tablespoons milk or cream (as needed)

• 1 (1-pound) box confectioners' sugar (about 3 3/4 cups unsifted)


• 1/4 cup chopped toasted pecans and 1/4 cup toasted flaked coconut

Recipe / Instructions

Make the Cake

• Assemble all the ingredients.

• Preheat the oven to 350 degrees F. Butter and flour three 8-inch cake baking containers.

• Put the 5 egg whites in a big bowl and beat until firm pinnacles form; put it aside.

• Join the flour and baking soda in another bowl; blend well and put it aside.

• In a big blending bowl with an electric blender, beat the shortening and butter together until soft.

• Include the granulated sugar and beat the butter blend until light and cushy.

• Include the egg yolks and beat well.

• Include the flour and baking soda blend to the butter blend in portions, exchanging with buttermilk.

• Mix in 1/2 tsp of vanilla. Include the coconut and chopped nuts.

• Overlap in the egg whites until the batter is uniform.

• Divide the batter equally among the three prepared cake baking containers.

• Bake the preheated oven for 26 to 31 minutes, or until a toothpick inserted in the centre comes out clean. Let the cake cool for 10 minutes and then invert it on a wire rack to cool off completely.

Make the Frosting and Assemble

• Assemble the ingredients for frosting.

• While the cake is baking, beat the cream cheese with the margarine until smooth.

• Beat in confectioners' sugar. Include vanilla and beat until smooth.

• If icing is exceptionally hardened, beat in some milk or cream to get a decent spreading consistency.

• Stack the cake layers, spreading the icing between each layer, and afterward ice the sides and top of the cake.

• Top with 1/4 cup of chopped nuts and 1/4 cup of coconut, as you like.
