1. Ingredients For the cake:

● Dairy-free butter for greasing

● 1 large ripe avocado

● 300 g of brown sugar

● 350g gluten-free plain flour

● 50g cocoa powder

● 1 tsp soda bicarbonate

● 2 tsp gluten-free baking powder

● 400ml unsweetened soya milk

● 150ml vegetable oil

● 2 tsp vanilla extract

2. For the frosting:

● 85g ripe mashed avocado fresh

● 85g dairy-free sunflower spread

● 200g dairy-free chocolate broken into 70% cocoa chunks

● 25g cocoa powder

● 125ml unsweetened soya milk

● 200g sifted icing sugar

● 1 tsp vanilla extract

● gluten-free and vegan sprinkles

3. Let’s Get Started:

● Start by preheating your oven at 160C/140C fan/gas. Grease your baking pan with some dairy free butter.

● Take 1 avocado and 300g brown sugar in a food processor and whizz until smooth. Then add 350g gluten-free plain flour to the mixture and mix it well.

● Further add 50g cocoa powder, 1 tsp bicarbonate of soda, 2 tsp gluten-free baking powder, 400ml unsweetened soya milk, 150ml vegetable oil and 2 tsp vanilla extract to the cake batter.

● Add a pinch of salt, preferably ½ tsp and mix it well till you get a velvety smooth batter of liquid consistency.

● Spread batter evenly over the greased baking pans and bake for 25 mins till it turns golden brown. To check whether fully baked or not, prick a toothpick or a knife and see whether it comes out clean. If not, cook it for another 10-15 mins.

● Once you are done baking the cake, keep it aside in the same baking pan and let it cool down for a few mins.

● To prepare the frosting, melt 200g dairy-free chocolate in a bowl or oven and then let it cool.

● Sieve 25g cocoa powder. Add 125ml unsweetened soya milk and stir it in low flame. Keep adding sieved cocoa powder to the soya milk and keep stirring it until smooth. Let it cool for some mins.

● Further, add the avocado mix, 200g sifted icing sugar, melted chocolate and 1 tsp vanilla. And keep stirring the mixture to make a shiny, thick frosting. Top and sandwich the cake with this frosting.

● Once done, to garnish the cake, sprinkle the gluten-free and vegan sprinkles and leave it aside for 10 mins to settle down.
