3. Let’s Get Started:

● Start by preheating your oven at 160C/140C fan/gas. Grease your baking pan with some dairy free butter.

● Take 1 avocado and 300g brown sugar in a food processor and whizz until smooth. Then add 350g gluten-free plain flour to the mixture and mix it well.

● Once you are done baking the cake, keep it aside in the same baking pan and let it cool down for a few mins.

● To prepare the frosting, melt 200g dairy-free chocolate in a bowl or oven and then let it cool.

● Sieve 25g cocoa powder. Add 125ml unsweetened soya milk and stir it in low flame. Keep adding sieved cocoa powder to the soya milk and keep stirring it until smooth. Let it cool for some mins.

● Further, add the avocado mix, 200g sifted icing sugar, melted chocolate and 1 tsp vanilla. And keep stirring the mixture to make a shiny, thick frosting. Top and sandwich the cake with this frosting.

Baker’s Note- As soon as you are done preparing the frosting, make sure you lay it out over the cake otherwise, it will thicken quickly. Even if it thickens, due to some unforeseen reasons, don’t panic, rather just warm a bowl full of hot water and stir the mixture with a spatula until it’s smooth and shiny.
